Primitive Cheesemaking

We got our home cheesemaking equipment in this week and made the first attempt: queso blanco. The main part, cooking and chemistry, went well, but getting it into the press was quite an adventure. It’s a Dutch‑style press, requiring a weight to exert force on the lever. Well, we lack any kind of “official” weight, so examine the picture below. Yes, that’s a dumbbell, the exercise kind.

    Where’d you get your press? We’ve tried a number of different kinds, including a screw-down model that Heather created, but still keep coming back to dumbbells. It’s an improvement over cans-on-a-board…

    I thought of y’all when I bought some queso blanco at whole paychecks. It was good enough, but paled in comparison to the fresh-outta-the-vat variety.

    Hey Jamie! I got your email the other day. . . we’ll be up with the guru July 24th and 25th. If you’re around then, we’d love to hang!

    As for the press, it came from New England Cheesemaking Supply (http://www.cheesemaking.com/store/p/49-Dutch-Style-Press.html). It’s pretty finicky at first, but for $125, it works. I’ll let you know how subsequent attempts to use it go.
